It is a staple rice dish, prepared at home and is also popularly served at roadside stalls and restaurants all over Egypt. <\/p>\n<p>The history of Koshari is actually derived from the Hindu \u201cKhichri\u201d, which refers to a dish of lentils and rice. Khichri was brought to Egypt, when it was a British protectorate, by Indian soldiers fighting alongside the imperial forces. It was nostalgic for the indian soldiers, and satisfied their need for a heavy carb meal. The people of Egypt welcomed the dish with open arms and maintained the rustic simplicity of Khichri, which can vary from dry and hearty to creamy and porridge-like. <\/p>\n<p>In Hindi, Gujarati and other Indian languages, it broadly translates as &#8220;something that is all mixed up&#8221;. With the change in the region and culture, Egypt also has varieties of Koshari &#8211; that includes boiled eggs, beef, chicken or flaked fish. <\/p>\n<p>Here is a vegetarian recipe for Koshari. At first glance it looks like a complex and hard-to-cook layered recipe of mixed spices, veggies, lentils and pasta. But then the first spoonful of Koshari engulfs you in it&#8217;s tangy, crunchy fragrant embrace. It&#8217;s a melody of sense tingling experience in a spoonful. <\/p>\n<figure id=\"attachment_1236\" aria-describedby=\"caption-attachment-1236\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.feamag.com\/2021\/wp-content\/uploads\/2020\/04\/2020-03-29-12.31.32-1-1-803x1024.jpg\" alt=\"\" width=\"525\" height=\"669\" class=\"size-large wp-image-1236\" srcset=\"https:\/\/www.feamag.com\/2021\/wp-content\/uploads\/2020\/04\/2020-03-29-12.31.32-1-1-803x1024.jpg 803w, https:\/\/www.feamag.com\/2021\/wp-content\/uploads\/2020\/04\/2020-03-29-12.31.32-1-1-235x300.jpg 235w, https:\/\/www.feamag.com\/2021\/wp-content\/uploads\/2020\/04\/2020-03-29-12.31.32-1-1-768x980.jpg 768w, https:\/\/www.feamag.com\/2021\/wp-content\/uploads\/2020\/04\/2020-03-29-12.31.32-1-1-470x600.jpg 470w, https:\/\/www.feamag.com\/2021\/wp-content\/uploads\/2020\/04\/2020-03-29-12.31.32-1-1.jpg 1074w\" sizes=\"auto, (max-width: 525px) 100vw, 525px\" \/><figcaption id=\"caption-attachment-1236\" class=\"wp-caption-text\"><strong>Processed with VSCO with  preset<\/strong><\/figcaption><\/figure>\n<h4>Ingredients: <\/h4>\n<p><strong>For Spice Mix:<\/strong><br \/>\n\u2013 1 tbsp Cumin Seed Powder<br \/>\n\u2013 1 tbsp Red Chilli Powder<br \/>\n\u2013 1 tbsp Paprika Powder<br \/>\n\u2013 1 tbsp Dried Methi (Fenugreek Leaves)<br \/>\n\u2013 1 tbsp ground Black Pepper <\/p>\n<h4>For Gravy: <\/h4>\n<p>\u2013 3 Pur\u00e9ed Tomatoes<br \/>\n\u2013 4-5 Garlic Cloves (Finely chopped)<br \/>\n\u2013 1 Onion (Finely chopped)<br \/>\n\u2013 3 tbsp Tomato Ketchup<br \/>\n\u2013 Salt to taste <\/p>\n<h4>For Koshari base <\/h4>\n<p>\u2013 2 cups Basmati Rice (soaked)<br \/>\n\u2013 1\/2 cup Macaroni Pasta<br \/>\n\u2013 1\/2 cup Masoor (boiled) (Whole Red Lentil)<br \/>\n\u2013 1\/2 cup Chickpeas (boiled)<br \/>\n\u2013 1\/2 cup Sweet Corn (boiled)<br \/>\n\u2013 1\/2 cup Fried Onions<br \/>\n\u2013 2 cups water <\/p>\n<p><strong>Serving<\/strong>: 3-4 people <\/p>\n<p><strong>Cooking Time:<\/strong> 30 minutes <\/p>\n<h4>Method: <\/h4>\n<p>\u25cf Mix all the spices in a small bowl and keep it aside to use it in the gravy and rice.<br \/>\n\u25cf  For  the  gravy,  use  the same pan and add oil. Add the onions and garlic. Saut\u00e9 until translucent. Add the tomato puree, let it simmer for 5 minutes. Add the Tomato Ketchup, 1 spoon spice mix and salt to taste.<br \/>\n\u25cf Cook the gravy for 7-8 minutes on medium to low flame until it thickens. Remove the gravy from the pan, into another utensil\/container.<br \/>\n\u25cf For the Koshari base, again use the same pan &#8211; add rice, macaroni pasta, salt, the remaining spice mix, and water. Make sure the gravy and base are fresh and warm until the time of assembling.
